MPC1000 with JJos.
Portable, great sound, great swing, usable internal FX and filters, lot of memory, great OS. You really get a lot for the money.

Learning scales and a bit of theory definitely develops your musical ear, so when it's time to produce you don't have to worry about what kind of scale or chord you're using.
You instinctively know what sounds good or not.
