Shame the Emulator III doesn't have the same functionality as the Ultra, it's got analog filters, you'd obviously never get that in software. I would even say that the digital filters in Kontakt are quite different to the filters in E-mu. Which one is better is matter of preference. The analog E-mu...

This is just a rough guess, but I think the pads in the deep88 song is an Access Virus, at least the filter sounds very similar. A nice tune, btw... :)

I don't have these classics but I have the 2500. I sample synths, drums, anything really. After that I build some loops that I record into DAW. It sends and listens to MTC or Midi clock so it's easy to integrate it into a DAW enviroment. Especially if you have an 8 input interface.
