I would recommend listening to tracks on Perspectiv, Dial, Diynamic, Infine, maybe even Karmarouge.
Laurine Frost's 'Ghosts' ep feels particularly classical, especially the track Ulysses. As does a lot of Ferenc Vaspoeri's work.
Artists sampling 'Classical Music' ?

Yes, Murcof, of course. THE master.
Horror Inc (Akufen project) has made some good tracks too : http://mp3.juno.co.uk/MP3/SF219160-01-08-02.mp3
I recommend Anders Ilar as well. No violins, no guitar, but a very organic and dark ambiance as you could like I guess. Don't miss his next album : Sworn.
You can listen to one track from his forthcoming album on his myspace : http://www.myspace.com/andersilar
(Imaginary Trees)
Try Ion Ludwig too, because he makes something different. He uses some ethnic and more classical instruments within minimal techno.
This is the sh!t, I think you could like it :
