I like using the envelopes in clips to shape a sound too.
SO handy - Whether its taking out an annoying noise.. or something like, making a bit of bounced effect into a one shot etc.. Its great.
Far handier than chopping sh!t up & throwing it into a sampler.
Love ableton.

Other than volume and filter envelopes on kontakt, battery and synths I use, I dont really use them. I'm keen to find out other ways and applications tho?

Other than the wheels on my car, bike and trolly I dont really use them.
i don't know maybe i'm missing something?
i use them for volume, filter and pitch on samplers and all sorts of things in synths. do attack and release on a compressor count as being envelopes?
