I think you're thinking of the VariAxe which "models" different guitars, and you can build your own out of different woods. It might use MIDI for program switching but I think it actually uses a proprietary connection (that looks a lot like an ethernet plug) to connect into Line6's foot controllers.

looks more like a guitarhero controller than a to be taken serious tool. i have seen nice vintage guitarsynthesizers, but never a serious guitar based midi tool.
